Kadhi – A Gujarati Dish | गुजराती कढ़ी | Buttermilk Soup

Kadhi is a Gujarati recipe [गुजराती नुस्खा], which is mostly eaten with khichdi in every Gujarati home. It is prepared with buttermilk and gram flour/besan. Gujarati’s love to eat kadhi in winter season and rainy season because in these seasons the weather is cool and the kadhi is hot hot. It goods well with khichdi, roti, papad and pickle and our Prime Minister Narendra Modi prefers Kadhi and Khichdi together for the evening supper.

Preparation of Kadhi | गुजराती कढ़ी

Ingredients of Kadhi

  • 1 cup buttermilk
  • 2 tbsp Gram flour
  • 1 medium Onion(optional)
  • 1 medium sized tomato chopped
  • 3 green chilli
  • 1 steam curry leaves
  • 1 tsp turmeric powder
  • 1/2 tbsp garlic paste
  • a small ball Jaggery
  • 1 tsp dhaniya powder/coriander powder
  • 1tbp mustard seeds
  • 1 tbp cumin seeds
  • 1tbp carom seeds
  • 1/2 tbp Asafoetida/hing

Method to prepare Kadhi

  1. In 1 cup of buttermilk add two tbsp of gram flour and mix well.(we can also use other flour like wheat flour)
  2. Now in a pan add oil and let it heat.
  3. Then add mustard seeds and let it splutter.
  4. Add cumin seeds and then hing to the oil.
  5. 1 tbsp carom seeds to be added to the oil.
  6. Then add green chill and curry leaves, saute for a second.
  7. Later on add Onion and let it fry, till it becomes slightly brown.
  8. Then add tomatoes and saute till they are soft.
  9. Now start the seasoning by adding turmeric powder, dhaniya powder, salt, and garlic and stir for few seconds.
  10. Now slow down(sim) the gas stove and slowly add gram flour buttermilk to the onion/tomato mixture.
  11. Now continuously stir the buttermilk till it comes to boiling point.
  12. Add jaggery to the buttermilk.
  13. Off the gas stove and garnish with coriander leaves.
  14. Serve it with Khichdi, roti, and papad.
