Spicy Vegetable Khichdi | Masala Khichdi ‎| मसाला खिचड़ी रेसिपी

Khichdi is very famous dish in North India and in few more places of Asia. It is a traditional kutchi recipe, almost all Gujarati have Khichdi in their dinner. Khichdi is very nutritional food as well as healthy dish, which all people should have in their meals. The Prime Minister of India, Mr. Narendra Modi [The Man who gave the world – International Yoga Day] has a very simple diet plan and special for evening supper, he likes to have Khichdi and Kadhi. Both the recipes we have covered on Smart Lady Life. The simple khichdi you might not like everyday, so to make you a smart lady we have come up with “Spicy Vegetable Khichdi” which adds decent taste and yet maintains a healthy dish for a lovely dinner.

There are many varieties in khichdi – Gujarati plain khichdi, Mix Vegetable Khichdi, Sankranti khichdi, Traditional khichdi, Bengali khichdi, Bihari Khichdi, Sabudana Khichadi and many more.

Spicy Vegetable Khichdi | मसाला खिचड़ी रेसिपी

In this article i’m going to show you how to prepare Spicy Vegetable Khichdi, it goes well with kadi, papad, pickles, roti and curd.

So let’s get started –

Ingredients

      • 1 cup khichdi(1/2 cup Rice and 1/2 cup Green Gram)
      • 1 medium onion
      • 1 medium carrot
      • 1 medium potato
      • 5-6 French beans
      • 2-3 Green chilies
      • 10-12 Groundnuts
      • 1/4 cup Soybeans/Chole(chickpeas)(optional)
      • 1 stem Curry leaves
      • 1 tbsp Ginger & Garlic paste
      • 1 tbsp Turmeric powder
      • 1 tbsp Red chilli powder
      • 1 tbsp Dhaniya powder
      • 1/2 tbsp Mustard seeds
      • 1/2 tbsp Cumin seeds
      • 1/4 tbsp Hing
      • 4 cups Water
      • salt to taste

Preparation

Half Cook 1 cup plain khichdi in a pressure cooker (Half cooked means off the gas stove after 2 whistle).

Heat a pan and add 2 tbs ghee.

Now add mustard seeds in the ghee and let it splutter.

Then add cumin seeds in the ghee.

Later on add Asafoetida/Hing in the ghee.

Add Green chilies, Curry leaves and Onion, saute till they turn slightly brown.

Now add all the vegetables(Carrot, French beans, Potatoes and other vegetables of your choice) in the pan and saute for few minutes.

Start seasoning by adding turmeric powder, red chilli powder, coriander powder and salt.(Add salt as per vegetables only, because in khichdi we already added salt)

Mix all the ingredients well and keep on stirring the vegetables.

Now add ginger and garlic paste and saute all the vegetables.

Then add the vegetables mixture to the half cooked plain khichdi.

At last add groundnut to the khichdi and close the pressure cooker.

Later on, cook the vegetable mixed khichdi up to 3 whistles. Open the pressure cooker when the total air is out.

Add lemon juice and garnish the Spicy vegetable Khichdi with coriander leaves.

Now the Spicy Vegetables Khichdi is ready and serve it hot.

Instructions
